Real Chinioti Kunna in Islamabad and Rawalpindi — Cooked by a Chef from Chiniot

If you're from Chiniot, Faisalabad, Jhang or anywhere on that side of Punjab and you've moved to Islamabad or Rawalpindi, you already know the disappointment. You see "Chinioti Kunna" on a menu, you order it hopefully, and what arrives is a mutton karahi with a lot of ghee and some ginger on top. Good food, maybe. Not kunna.
This post is for you — and for everyone in the twin cities who has never had the real thing and doesn't know what they're missing. Because there is a kitchen in Soan Garden where kunna is cooked by a chef who grew up with it in Chiniot, in the pot it's named after, the slow way. Ours.
Why the twin cities get kunna wrong
It's not bad intentions; it's economics and geography. Real kunna is slow, sealed and cooked hours ahead — a restaurant that cooks to order in twenty minutes can't make it, so it makes a karahi and calls it kunna. Islamabad's restaurant culture grew from Peshawar's, Lahore's and Karachi's, not Chiniot's, so few cooks here ever learned the dish at home. And the pot itself — the clay kunna — is a nuisance in a fast kitchen: it's fragile, it's slow, and it can't be rushed on a high flame without cracking.
So you get the shortcut. Tomato-heavy gravy that runs like a curry. Meat that needs a knife. No atta finish, no marrow depth, no ghee bloom on top. If you've had kunna in Chiniot, you can tell from across the table.
What makes ours the real one
- A chef from Chiniot. Not a chef who learned kunna from a recipe — one who learned it from the people who cook it there. Our founder is from Chiniot too, which is why the dish is on our signboard and not buried at the bottom of a menu. The taste we chase is a specific memory, not a general idea.
- The pot, the seal and the hours. Mutton on the bone goes into the kunna with ghee, ginger, garlic and a short honest spice list; the pot is sealed and left on low heat for hours so the marrow and fat reduce into the gravy. We start it the day before it's served. Every time.
- The atta finish. The gravy is thickened with a wheat-flour slurry the Chinioti way — that glossy, clinging body that tears off with naan. No cream, no tomato paste pretending to be depth.
- Julienned ginger, slit green chillies, coriander on top, and nothing else. It is served the way it's served in Chiniot: with naan, sliced onion and lemon.

How to get it in Islamabad and Rawalpindi
- Order the pot. Chinioti Beef Kunna, full portion, Rs. 4,000 — comfortably 6 to 8 people with naan. Beef is the everyday version; it travels well and it's the one Friday dinners are made of.
- Mutton kunna for occasions. The classic Chinioti version is mutton, and it headlines our family dawat deals (Rs. 12,000 for 5–6 persons, Rs. 15,000, Rs. 20,000 for 10–12) and the larger degh deals — Special Chinioti Kunna in the Rs. 60,000 deal, a full mutton kunna degh in the Rs. 100,000 deal for 25 to 60 guests. Mutton kunna on its own, by weight or by degh, is quoted on WhatsApp the same day.

This is the one dish we won't rush, so we ask for what it needs: a day's notice for a full pot or a degh. Smaller beef kunna orders are often possible same-day if you call before noon, because there's usually a pot going — but if we can't do it properly that day, we'll tell you instead of sending a karahi.
An open challenge to Chinioti families in the twin cities
Order it. Eat it the way you'd eat it at home. Then tell us honestly how close we got — on WhatsApp, on Google, on the counter in Soan Garden Markaz. We've had families from Chiniot drive across the city for it and tell us it tasted like their mother's; we've also had one uncle tell us the ginger was cut too thick. Both kinds of feedback made the next pot better. That's the whole point of having a chef from home.
Questions people ask
Is it the same as kunna gosht in Lahore or Faisalabad? Same family of dish; Chiniot's version is the original and leans on the clay pot, the atta finish and restraint with tomatoes. Ours follows Chiniot.
Can I get it less spicy for kids or elders? Yes — say so when you order; the heat is adjustable, the method isn't.
Can I see it being cooked? Walk into the kitchen in Soan Garden Markaz, opposite Palace Bakery, 11 am to 11 pm. If a pot is on, you'll smell it before you see it.
